Roaster's TMI

"El Placer" is a coffee we consistently feature every season at Leicht Coffee Roasters. This project is led by Sebastian Ramirez, with the fermentation process managed by Wilder Lazo, the owner of Bella Alejandria—another renowned farm we are well acquainted with.

Due to the prolonged rainy season in Colombia, coffee harvesting and processing across all farms have faced delays. El Placer was also affected, pushing back our receiving schedule, but our importer resolved this by utilizing air freight to ensure peak freshness.

Fortunately, the quality remains just as exceptional, if not better. Through our light roasting approach, the anaerobic processing's signature herbal notes act as a delicate accent, while the white floral and clear fruit notes are brought beautifully to the forefront. You can expect a remarkably clean cup highlighted by bright acidity and a high level of sweetness.

The farm has also prepared a competition lot this year, which is scheduled to be imported. Given that the price is nearly double, we are still considering whether it will join our lineup, but we hope you get the chance to taste it somewhere. During cupping, it showed incredible potential even as a fresh crop.

< Processing (Carbonic Maceration) >

  1. Hand-harvested, selecting only 95% fully ripe cherries.

  2. Anaerobic fermentation (Carbonic Maceration) for 96 hours in 200-liter drums injected with carbon dioxide at a constant temperature of 18°C.

  3. Submerged fermentation for 48 hours.

  4. Pulped and lightly washed to delicately control the mucilage.

  5. Dried for approximately 20 days in a controlled environment (40°C internal temperature, 25% humidity).

  6. Additional drying on a shaded patio for 4 days.

  7. Stabilized in Grain-Pro bags for 15 days.
