We recommend letting the coffee rested for at least 10 days before brewing, though our roastery considers the ideal resting period to be 3 weeks or more.

This lot was processed from cherries collected from 76 smallholder farmers cultivating coffee in the high altitudes of Gedeb.

Upon arrival at the washing station, the cherries are sorted and then undergo submerged fermentation for 48 hours.

After pulping, they are soaked in clean water for an additional 24 hours to remove the mucilage.

To prevent rapid drying, the beans are initially dried in the shade for 8 hours before being transferred to African beds, where they dry for approximately 13 days.

During this period, they are continuously monitored to ensure even moisture loss, and the drying process is concluded once the optimal moisture content is reached.
